Baking has been my lifelong passion and my favourite way to unwind. When we moved to Sydney, I urned that passion into VLJ Pastry.
My mission is to teach you how to achieve professional results using standard home kitchen equipment and to show you that mastery is about technique, not tools. "You do not need a high-tech lab to bake like a French chef."
Every session is small, intimate, and entirely hands-on. You'll work through the full technique from scratch — no shortcuts, no shortcuts, no pre-made mixes. Just traditional recipes, quality ingredients, and the kind of patient teaching that makes the difference.
In the middle of every class, there's a *moment de détente* — a pause to taste, connect, and enjoy what you've made. Because great patisserie is never just about the result.
